We cure our BAM back bacon from pork loin, with a little of the belly still attached. This is the traditional British rasher with the great meatiness of the loin and the tasty fat from the belly.
We keep the rind, which crisps into crackling during cooking – a little strip of crispy crunchy heaven, right there…
Each packet contains 200g of our awesome bacon, which is usually about 5 or 6 rashers.
